
GAPS Graham Crackers
Ingredients:
4 1/2 cups almond flour
1 teaspoon gelatin
2 teaspoons cinnamon (reserve 1 for sprinkling on top)
1 teaspoon vanilla extract
1/4 cup coconut oil, butter, or lard
Instructions:
Preheat the oven to 350 degrees. Place all of the dry ingredients in a food processor, and blend until smooth. Add the wet ingredients, and blend again. Grease a jelly-roll pan, line with parchment paper, then grease again. Gently and evenly press the mixture onto the pan. It may seem like there isn't enough, but just keep working it around with your palm and fingertips until the pan is evenly filled. Using a knife, score the dough into rectangles and poke with a fork to make them look like traditional graham crackers. Bake for about 12 minutes. Take out and let cool then remove from pan & enjoy!
